Just thought I'd drop in and share that I have had celiac disease my entire life and have never really fully recovered- even after removing all the gluten sources from my diet.

Recently I have been working with a very gifted medical researcher who shared with me that the original diet for celiacs also elminated all dairy and potatoes.

It seems that these sugar molecules duplicate those of gliadin and damage the intestines just like the sources of gluten we all recognize today.

If you aren't as well as you'd like to be, try eliminating dairy ( this is not news) and POTATOES (this IS news) and see if this doesn't help.

Doing so has certainly helped me.

I have been gluten, milk, yeast and sugar free since 1992. I am in the process of compiling a recipe book of all my recipes (about 160 of them) because it is so important now with the latest research on how this diet helps autistic and ADHD children. The book should be completed before June 2010.

I am traveling on my Book Tour all throughout Pennsylvania, new York and New England. I ma truly amazed at the amount of restaurants that either have Gluten Free menus or have options for my GF meals. The word has spread about the need!

Hi Tina,
Thanks for starting this group.

Going gluten-free (and dairy free) 2 years ago produced a profound improvement in my health. I'll be interested in learning more and am always on the lookout for good recipes.
